LA BORDERIE

Marie and Simon Normand represent the new wave of talent in Champagne’s southern outpost, the Aube. Taking the reins of Domaine La Borderie from their parents in 2013, the brother-and-sister team has completely eliminated chemical treatments in favor of a robust, organic vineyard ecosystem. By integrating cover crops, planting 400 meters of hedges, establishing a vineyard orchard, and installing bird and bat boxes, they actively foster natural biodiversity. This vibrant environment nourishes 30-year-old vines planted to Pinot Noir, Meunier, Chardonnay, and rare Pinot Blanc. While the family farms 11 hectares, they enforce an incredibly strict quality standard: 90% of their fruit is sold off, retaining only the top 10% to produce a mere 10,000 bottles annually under their own label. In the cellar, over 20 plots are vinified separately each year to preserve absolute aromatic integrity. The resulting champagnes are precise, generous, and laser-focused expressions of the Côte des Bar. Extending their passion beyond the bottle, the estate also doubles as a boutique hospitality destination, offering an immersive look into the bounty of the Aube.
