Domaine la Borderie "Douce Folie" Rosé

Translating to "Sweet Madness," this bottle is an absolute labor of love that sibling duo Marie and Simon Normand only produce in exceptional vintages. It is a single-parcel 100% Pinot Noir sourced entirely from their prized 50-year-old vines in the southwest-facing lieu-dit "Douce Folie" inside the village of Merrey-sur-Arce. To achieve its stunning, deep ruby-pink color and muscular structure, they use the rare Rosé de Saignée (skin-maceration) method, leaving the juice in contact with the dark grape skins for a massive 36 to 48 hours before a long, 24-to-36-month sleep in the cellars. It is finished with a very low, crisp Extra Brut dosage.

Why we love it: This isn't your typical commercial pink sparkling wine. It's deeply vinous and gastronomic with a blend of fresh violets, wild raspberries, blackcurrants, and tart cherries.
