Domaine la Borderie "L'Arpent Oublie'

Translating to "The Forgotten Acre," this is a single-parcel 100% Pinot Blanc. Sourced by sibling duo Marie and Simon Normand from a tiny west-facing plot called "Val Moré" in Bar-sur-Seine, the old vines were originally planted all the way back in 1954. It is vinified with 15% aged in oak barrels and finished as a pristine, zero-dosage Brut Nature. Only about 2,200 bottles are produced each year.

Why we love it: While Pinot Blanc is technically permitted in Champagne, it makes up less than 0.1% of the entire region's vineyards, making this an absolute unicorn bottle. You get wildflowers and tropical fruits with a delicately saline finish.

The vibe: This is a rare bottle. Open it on a lazy afternoon on the patio with a bag of salty chips.
