PETIT CLERGEOT
Paul-Bastien took over his family’s estate in 2017, quickly transitioning its 8 hectares of vines across Polisot, Les Riceys, Balnot-sur-Laignes, and Montgueux to certified organic practices. Based in the stunning, quiet hamlet of Polisot in the Aube, his radical commitment to the land is best illustrated by his vineyard team: he uses pigs instead of tractors to turn the soil, feeding them organic produce from his grandmother’s farm. In the cellar, winemaking is a dynamic, constant experiment. Rejecting rigid recipes, Paul-Bastien lets each plot and vintage dictate its own path, vinifying and aging in everything from stainless steel and amphorae to various sizes of oak barrels. To maintain uncompromising quality, he sells off more than half of his annual harvest, bottling only the very best plots under his own name. The resulting champagnes perfectly mirror his free-spirited approach—exemplified by unreleased project drafts like his unlabeled "Street Wine" meant for casual drinking with friends. His commercial releases are lively, energetic, and incredibly delicate, wrapped in bright, playful labels. While the brand doesn't take itself too seriously, the wine inside proves Paul-Bastien is crafting some of the most exciting, sought-after bottles in Champagne today.
