CHAMPAGNE PETIT CLERGEOT 'Rosé'

It is a rosé made from 100% Chardonnay—and no, that is not a typo! Following his strict rule of single-plot, single-variety, single-harvest expressions, Paul-Bastien sources this bottle entirely from old vines in the clay-limestone lieu-dit "Les Commes" in the village of Polisot. To achieve the pink hue and intense structural body without using any red grapes, he puts the Chardonnay through an extended, meticulous skin-contact macération pelliculaire directly at the press house. Like all his unicorn releases, it is bottled raw and naked as a Brut Nature with zero dosage.
