Paul-Bastien Clergeot steps outside his home base in the Côte des Bar to farm a legendary pocket of land: Montgueux, an isolated chalk hill often called the "Montrachet of Champagne" for its explosive Chardonnay. Sourced from a single south-facing parcel planted in 1986, the old vines dig deep into pure white Turonian chalk and flint.

Why we love it: To capture this unique terroir completely raw, Paul-Bastien avoids wood entirely, fermenting the wine in terracotta amphorae and stainless steel tanks before releasing it completely unmasked as a zero-dosage Brut Nature. You get candied lemons and traces of white smoke with a bone-dry finish.
