Paul-Bastien operates on a strict, minimalist philosophy: one plot, one grape variety, and one vintage. This bottle is a 100% Pinot Noir Blanc de Noirs sourced entirely from the single lieu-dit "Chevry" in the village of Polisy. The old vines were planted in 1975 at the bottom of an east-facing slope right along a cool riverbank. Unlike his Cuvée Fût which sees oak, the Cuvée Cuve is fermented and aged exclusively in stainless steel tanks to preserve the raw, unadorned energy of the fruit, before being finished completely naked with zero dosage.

Why we love it: It completely strips away the heavy, broad-shouldered fruit profile you normally expect from southern Champagne Pinot Noir, replacing it with laser-focused clarity. Because it never touches wood, the nose is wonderfully clean and precise—bursting with tart green apple, crisp citrus peel, and unripe wild berries wrapped in a distinctly cool, rocky minerality.
