Translating to "The Dreams," this highly limited micro-cuvée is winemaker Deborah’s dedicated expression of single-vintage 100% Pinot Noir. Pulling from a microscopic selection of plots on the diverse soils of Vandières, the fully ripe fruit undergoes spontaneous fermentation and lengthy maturation entirely in hand-selected old oak barrels. Bottled completely unfined, unfiltered, and with a bone-dry, structural Extra Brut dosage, this represents a tiny, artisanal production where only a few hundred bottles exist per vintage.

Why we love it: t trade the typical heavy, rustic weight of southern Pinot Noir for a remarkably delicate, airy, and high-tension frame with a highly expressive, elegant bouquet of fresh field strawberries, blood orange zest, and white flowers.
