This is a single-parcel 100% Chardonnay Blanc de Blancs sourced from the south-facing lieu-dit "Les Barils". Fermented entirely in individual oak barrels and aged inside his roadside subterranean chalk cave, it is finished raw and bone-dry as a completely unsugared Brut Nature.
