COSE 'PERSEVAL' 2023

For the 2023 vintage, they partnered with legendary natural grower Thomas Perseval. They sourced 100% Pinot Noir from a single, low-slope parcel planted in 1960 called "La Pucelle" in the Premier Cru village of Chamery. The grapes were pressed on Perseval’s traditional vertical basket press, and the raw juice was rushed without sulfur or settling to Cose's cellar in Chouilly. It was fermented using native yeasts in used Jacques Selosse barrels and bottled under cork with zero added sugar as a bone-dry Brut Nature.

Why we love it: It is incredibly raw, gutsy, and alive. Because it is raised entirely in old Selosse wood without sulfur, the wine balances electric energy with an oxidative, open personality. The nose is deeply expressive, showing off bruised yellow apples, tart red berries, and subtle hints of baked pastry crust.
