COSE 'BOUVET' 2023

Gounders Gil Conejo and Victor Allier teamed up with cult grower Antoine Bouvet for this 2023 masterpiece. They sourced 100% Chardonnay from Bouvet’s highly acclaimed single plot "Les Rocheforts" in the Premier Cru village of Bisseuil. Grown on pure chalk with an optimal west-southwest exposure, the fruit was slowly pressed and sent to Cose's cellar to ferment naturally in used Jacques Selosse oak barrels. Bottled entirely without sulfur and finished as a bone-dry Brut Nature with zero dosage.

Why we love it: It strips away the safety net of added sugar to showcase a stunningly precise, crystalline mineral skeleton. The nose is deeply expressive and bright, bursting with white flowers, fresh citrus zest, and damp chalk.
