VVV Rose is a "happy mistake," as Matthieu attempted to make a still red wine. When that wasn't working, he blended roughly 10% of the rich red juice into the V.V.V. base.

Why we love it: We love a happy accident, especially when it's mixed with an already stellar champagne. This is dark, rich and deep. This champagne blows us out of the water. We get dark cherries, molasses and smoke with notes of floral. This champagne is bright and beautiful.

The vibe: Friends are coming over and you're ordering in Indian food to have dinner on the back patio.
