Matthieu Godmé-Guillaume crafts this champagne evenly from Chardonnay and Pinot Noir, sourced entirely from his organically farmed family plots in Verzy. Roughly 92% of the entire blend comes specifically from his old-vine Pinot Noir plot, which is widely considered to be his absolute best and most expressive. It is fermented 100% in hand-selected French oak barrels, aged long on its fine lees, and bottled unfined and unfiltered with a minimalist 1g/L Extra Brut dosage.
