Brice Allouchery crafts this single-parcel 100% Pinot Noir from "Les Blanches Vignes," an organically farmed vineyard in his home village of Écueil. The prized old vines were originally planted in 1964 by his grandfather, digging deep into Écueil's distinct, pale sandy-limestone and chalky soils. Fermented natively with natural yeasts and raised for 10 months in 500-liter wooden barrels, the wine spends three full years resting on its laths before being disgorged completely bone-dry with an ultra-low Extra Brut dosage.

Why we love it: Unlike many powerful, fruit-heavy Blanc de Noirs, the 2020 harvest leans into a highly intriguing, structural personality. It balances classic Champagne richness with a unique floral, root-like, and botanical complexity.
