Caillez Lemaire 'Jadis' Extra Brut 2012 is the estate’s crowning achievement and a masterclass in extended aging. The grapes are pulled from old, south-facing Premier Cru plots in Cumières and Hautvillers.

Why we love it: Thanks to a decade under cork, the texture is incredibly luxurious, dense, and layered. The nose is completely explosive and beautifully mature—screaming with toasted brioche, roasted almonds, golden yellow apples, and warm acacia honey.

The vibe: A winter night by the fire, reminiscing with friends with an easy cheese plate of aged Parmigiano-Reggiano.
