Cyril Bonnet strips away all of Champagne’s traditional blending rules to focus entirely on a single grape from a single plot. Sourced from old Pinot Meunier vines planted in 1971 inside the Premier Cru lieu-dit "Le Jour" in Vrigny, this micro-cuvée is fermented with indigenous yeasts and aged in oak barrels for nine months. It is bottled completely without added sulfur and finished as a pristine, bone-dry Brut Nature with zero dosage.

Why we love it: It completely flips the script on Meunier, trading simple fruity notes for serious, savory muscle. The lack of sulfur gives it an incredibly open, expressive aromatic profile. With notes of dried red apples, hazelnut butter, and light rolling tobacco, it delivers a massive, robust wave of saline minerality.
