Brother and sister Marie and Simon Normand are taking this farming family into the new generation of wine making with La Borderie, leaving behind chemical treatments and only using organic materials when working the vines.


As we walk the vineyard, you see their push toward biodiversity with grasses between the vines, 400 meters of hedges and even a small orchard. This helps support birds, insects and bats, creating a complete ecosystem to support the best vineyard health possible.


While La Borderie farms 11 hectares of vines, they only use 1.5 hectares to create the champagnes of La Borderie, with an annual production of only 10,000 bottles! The top 10% of the harvest each year is used to create their wines. While the rest of the grapes are sold to the co-op or big houses.

Trois Contrees

Trois Contrees bottling features three grapes (70% Pinot Noir, 20% Chardonnay, 10% Pinot Blanc) from three vineyards each in different river valleys. The true diversity of terroir and packed with everything you could want in a bottle of champagne. Don’t miss our One Bottle Review.


Why we love it: This is a quietly delicious wine. There's juicy peach, red skin of an apple, apricot and almonds. The 15% reserve wine in this champagne gives it a complexity and depth that we really loved.  


The vibe: Fried chicken, avocado toast


De Quoi Te Meles-Tu?

De Quoi Te Mêles-Tu?, which translates to ‘None of Your Business,’ is made from 100% Pinot Noir grown in a vineyard planted in 1980 and farmed organically in the village of Neuville sur Seine. It is fermented in stainless steel and malolactic fermentation is blocked to preserve the purity of the fruit. 


Why we love it: This champagne is luminous, yet subtle. We found the fruit really shines with the aroma of fresh grapes, apple and cherry. 


The vibe: Simple, salty, and fatty foods like chips, popcorn or grilled cheese. Want to be slightly fancy? You can never go wrong with oysters.


 

Douce Folie Rosé is made from 100% Pinot Noir grapes grown on 50-year-old vines, using grapes from only the best vintages when the grapes are ripe and dosage is not needed. What’s interesting about this rosé is that it’s made in the maceration, or saignée, method, which is typically used when making red wine, and produces a deep red color. 


Why we love it: The purity of fruit and mastery of winemaking is on display in this wine. You may notice floral notes of violet and fresh fresh berries like raspberry and blackcurrant.


The vibe: The structure of this wine will cut perfectly through rich, fatty, salty foods. Keep it simple with a charcuterie board or a bowl of in-season strawberries.




L'Arpent Oublie

L'Arpent Oublié is fun. It is 100% Pinot Blanc from a single vineyard in Bar sur Seine that was planted in 1957. The old vines and 15% of the juice fermenting in old oak make this a standout and an oddity that is so much fun to drink.


Why we love it: Drinking a 100% Pinot Blanc Champagne is incredibly rare, especially one made from a single vineyard. This wine is refreshing and crisp with vibrant notes of green apple and flinty minerality. 


The vibe: Sushi (not from the grocery store), baguette with good butter
