COSE 'BICHERY' 2022

This is a partnership with Raphael Piconnet of Domaine de Bichery, sourcing 100% organic Pinot Noir from a single, west-facing plot planted in the mid-1985/1987 called "La Fontaine du Noyer" in Gyé-sur-Seine. The grapes were pressed without sulfur at the source and rushed to Chouilly, where they were fermented naturally using native yeasts inside used Jacques Selosse oak barrels. Bottled under a cork closure with absolutely no added sulfur and zero dosage.

Why we love it: Despite being a young wine, its elevation in seasoned Selosse wood gives it an incredibly complex, expansive, and slightly oxidative style that is wide open from the start. The nose is incredibly generous, bursting with candied starfruit, crisp red apple, fresh raspberries, and peach.

The vibe: You're headed to a friend's house for a casual hangout with smash burgers and fries.
